Ingredients

Before everything else, we should gather the ingredients that are required to make masala idli.

For the Idli Batter –

  • 1 cup urad dal (split black gram)
  • 2 cups rice
  • 1 tsp fenugreek seeds
  • Rock Salt (a pinch)

For making masala idli, we should have idlis ready. If you don’t have idlis, here’s how you can make it first.

  • First of all, soak split black gram, fenugreek seeds, and rice separately for a few hours.
  • Once they are soaked for about 3-4 hours, grind the soaked urad dal with some water to make a smooth and fluffy paste. Do the same for rice and grind it into a slightly coarse batter. Mix both batters well.
  • Add salt to the batter and leave it to ferment for 7-8 hours or overnight in a dry cool place or keep it in fridge.
  • Now, take idli molds and grease them with a little ghee or oil. This prevents the idlis from sticking in the mold.
  • Pour the batter into the molds and fill them about 3/4th then steam for 8-10 minutes. You can try a quick hack to check if they are baked or not; just insert a toothpick into the center and if it comes out clean, it means they are baked.

  • First things first, cut the idlis into small pieces. Also, cut onion and tomato if you want to add them.
  • In a pan, heat ghee or cold-pressed oil.
  • When the oil or ghee heats, add cumin seeds, hing a pinch to the pan and roast it till crackling.
  • After that add Idli Cubes and Toss it till a little golden crispy, you can saute chopped onion and tomato before adding Idli with some seasoning of salt but that’s optional.
